  • Overview of the most critical chemical hazards (e.g., heavy metals, pesticides, mycotoxins, allergens, cleaning agents)
  • The importance of chemical hazard control for public health and trade
  • Regulatory oversight and key international bodies (e.g., Codex Alimentarius, FDA, EFSA)

Module 2. Sources & Routes of Chemical Contamination

  • Agricultural chemicals: pesticides, veterinary drugs, fertilizers
  • Environmental contaminants: heavy metals (lead, cadmium, arsenic), dioxins, PCBs
  • Processing and packaging contaminants: lubricants, cleaning agents, migrants from packaging materials
  • Food additives and processing aids: safe use and unintended residues
  • Natural toxins: mycotoxins (e.g., aflatoxins), plant toxins, marine toxins
  • Food allergens as a chemical hazard: cross-contact and undeclared allergens
